Tonight we had Pan Seared Salmon with Citrus Vinegar Glaze (pg 240). Chris gave this cookbook to me. I think anyone who doesn't like Rachael Ray is a food snob without young kids. If you have time to make something like Cucumber and Smoked Salmon Wraps with Paradise Seeds, and you have three boys age 7, 6, and 21 months, then you aren't spending enough time with your kids, and they must be very skinny. Anyway, I think I am going to make more dishes from this cookbook because a bunch of them look really good and easy.I made a simple sauce to put over linguini with fire roasted tomatoes (Muir Glen organic). Normally we have a vegetable, but I didn't order any from our food co-op this month (we usually keep a bunch of frozen organic veggies in the freezer for quick sides) thinking we'd rely mainly on Super Suppers, but I've fizzled out of that. There are some Super Supper dishes that are good and probably worth it, but this month it just struck me that most everything that we bought could have been thrown together in a very short amount of time- it would be cheaper, fresher, and healthier since I could use organic ingredients. So I think we may not do Super Suppers so much. I will tell you the pesto they made for one dish was very good. They had a bunch of pine nuts and everything. Anyhoo, the salmon that we buy is from the food co-op too, and it is wild salmon not farm raised so there is less mercury. Gray ate better than Jer. I treated the boys to ice-cream at Dairy Queen after school since they got out at noon, and I think those extra calories diminished Jer's appetite a little. Jon ate everything.
G dropped a package of Polar Ice Eclipse on the island, and I thought that might be a good way for me to avoid any cravings for dessert. When Gray saw me pop one in my mouth, he wanted one. Well, he can't have one. I pulled out some gummie vitamins that the boys can have. They can have a total of six. Any more than that would probably be too much vitamin A. After Gray had his six, he cried and cried for more. Here is a shot of that. G bought some Yogos for the boys the other day ("yogurt covered fruity dots"), and that was enough to make him happy. A little dessert for the baby is ok. Right?

I'm glad you used the cookbook. Rachel Ray was getting so much flack lately, that I was starting to feel self-conscious for having gotten it for you. =)
The recipes look great. I guess she doesn't seem fancy enough for some. I think she cooks real, everyday food that everyone can make. I saw that she wrote a cookbook for kids when I did a search for her book on Amazon. That's the trick with kids. You have to make food that is palatable for them which means simple seasoning. Less is more with kids. The boys definitely prefer Kraft over my homemade, swiss and cheddar, eggs, real butter, condensed milk, dash of nutmeg, extra fattening macaroni and cheese.
